| | Vaangi Batata Masala (Potato and Eggplant)

Ingredients
500 gms Potatoes
- 300 gms Eggplant
- 2 chopped Onions
- 1 ½ tsp Ginger-garlic paste
- Chopped tomatoes
- 1 tbsp chopped coriander leaves
- 1/2 tsp cumin seeds
- A small piece of cinnamon
- 1/2 tsp turmeric powder
- 1/2 tsp red chilly powder
- 1 tsp coriander powder
- 1/2 tsp cumin seed powder
- 1 ½ tbsp Oil
- Salt to taste
Method
- Boil and dice potatoes into 2 inch pieces, saute and keep aside.
- Cut the eggplant in a similar way and shallow fry until cooked.
- Heat the oil and add cumin seeds, when they crackle, put the onions and the ginger-garlic paste and wait till golden brown.
- Then add the tomatoes, turmeric powder, chilly powder, coriander powder, cumin seed powder, cinnamon and salt.
- Keep stirring till the oil begins to separate from the onion-tomato paste.
- Add the potatoes and eggplant.
- Let till simer for 10 minutes.
- Squeeze in the limejuice.
- Garnish with coriander leaves.
- Serve hot.
