Vaangi Batata Masala (Potato and Eggplant)


  • Vaangi Batata Masala 500 gms Potatoes
  • 300 gms Eggplant
  • 2 chopped Onions
  • 1 tsp Ginger-garlic paste
  • Chopped tomatoes
  • 1 tbsp chopped coriander leaves
  • 1/2 tsp cumin seeds
  • A small piece of cinnamon
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilly powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seed powder
  • 1   tbsp Oil
  • Salt to taste


  1. Boil and dice potatoes into 2 inch pieces, saute and keep aside.
  2. Cut the eggplant in a similar way and shallow fry until cooked.
  3. Heat the oil and add cumin seeds, when they crackle, put the onions and the ginger-garlic paste and wait till golden brown.
  4. Then add the tomatoes, turmeric powder, chilly powder, coriander powder, cumin seed powder, cinnamon and salt.
  5. Keep stirring till the oil begins to separate from the onion-tomato paste.
  6. Add the potatoes and eggplant.
  7. Let till simer for 10 minutes.
  8. Squeeze in the limejuice.
  9. Garnish with coriander leaves.
  10. Serve hot.
